Lobby Lounge's Cake of the Month for May is definitely an interesting selection. A walnut chocolate cookie crust forms the base of the cake. This is then topped with sweet pineapple mousse filled with tangy pineapple cubes. A layer of pineapple panna cotta filled with small cubes of nata de coco forms the middle layer. The cake is then crowned with pineapple flavoured jelly and finished with pineapple rings
